For a sourdough discard pizza crust ready to bake in ~1 hour without yeast, we’ll use baking powder for a quick rise while keeping the tangy flavor. This recipe prioritizes speed and simplicity, producing a thinner, crispier crust.1-Hour Sourdough Discard Pizza Crust (No added yeast)
Ingredients (makes 1 medium or 2 small pizzas, you can split the dough and refrigerate part of it for later):
¾ cup (180g) sourdough discard (unfed, 100% hydration)
¼ cup (60g) warm water (80°F/27°C)
1½ cups (180g) all-purpose flour (or bread flour for chewier texture)
1 tsp (5g) baking powder
¾ tsp (4g) salt
1 tbsp (15g) olive oil
½ tsp (3g) sugar (optional, for slight sweetness)
Instructions:
Mix Dough: In a bowl, combine sourdough discard, warm water, olive oil, and sugar (if using). In a separate bowl, whisk flour, baking powder, and salt. Add dry ingredients to wet, stirring until a dough forms.
Knead: Knead on a lightly floured surface for 3-4 minutes until smooth. If sticky, add flour 1 tsp at a time.
Rest: Cover dough with a damp cloth and let rest in a warm place (80-85°F/27-29°C) for 20-30 minutes. It won’t rise much but will relax for easier shaping.
Shape: Preheat oven to 450°F (230°C) with a pizza stone or baking sheet inside. Roll or stretch dough into a 10-12 inch round (or two smaller rounds) on parchment paper for easy transfer.
Top & Bake: Add sauce, cheese, and toppings. Bake for 8-15 minutes until crust is golden and cheese is bubbly.
Serve: Cool slightly, slice, and enjoy.
Tips for Speed:
Warm Resting Spot: Place dough near a warm oven or in an oven with the light on to relax faster.
Thin Crust: Roll dough to ¼-inch thickness for quicker baking and crisp results.
Discard: Fresher discard (1-3 days old) adds better flavor. If using older discard, ensure baking powder is fresh for lift.
Flavor: Mix in ½ tsp dried oregano or garlic powder for extra taste.

Baking Tips
Time and temp will vary depending on crust thickness, sauce choices, cooking surface used (pan, cast iron, pizza stone, etc..) and amount as well as the number of toppings.
Herb Tips: Herbs can be added directly to the crust recipe, glazed on in a butter mixture, added fresh on top, added prior to baking or incorporated into the meat or veggies you add.
Meat Tips : Utilize meat that has been pre-cooked to ensure that you don’t have uncooked meat toppings on a pizza that is done otherwise. Look up flavor combinations that go well with the meat you are using. Some veggies taste better with
Cheese Tips - Placing the majority of cheese after adding sauce with a little bit saved for the very top will ensure you get a good consistency and that the toppings will stay in place better on the pizza. Some cheeses like parmesan are tasty on pizza but require other cheeses to ensure a melty cheese topping. Soft cheeses are nice for little pops of flavor throughout and can be crumbled or dolloped on throughout the pizza.
Roasted Veggies - You can saute onions, garlic, zuchini, brocolli, or other veggies. Cook with oil or butter. You could even add a bit of seasoning like italian, basalmic or something else to enhance the flavor. Add on top of your pizza before or after cooking. If you add it before you will be able to lock in those flavors with a sprinkle of cheese on top.
Consider the thickness of the crust, cooking pan or stone and number of toppings to ensure it is evenly cooked. Utilizing a cast iron pan will require a lower temp (350 degrees fahrenheit should work), thicker crust or more toppings will need a lower temp for longer to ensure cooking throughout without burning the crust. A pizza stone is optimal for even heat distribution, crisping and serving.
Pizzas cooked on a pizza stone can be cooked between 375 degrees Fahrenheit and 450 degrees Fahrenheit for between 8-15 minutes. Cooking at a lower temp can give you more leeway to prevent overcooking the pizza . Look for melted cheese, slight browning on cheese and pizza crust. You can always cut the pizza on the pizza stone to see how the middle looks and put it back in for a few minutes more.
Ensure you adequately coat the cooking pan or stone with oil, flour, cornmeal or a cooking mat to prevent sticking to the cooking surface.
Notes:
Baking powder mimics yeast’s rise for a 1-hour timeline, as natural fermentation takes longer. This yields a flatter, crispier crust with mild sourdough tang.
