Sourdough Discard Biscuits to pair with Beef Stew
These sourdough discard dinner biscuit rolls are soft, tangy, and perfect for sopping up beef stew. They use no additional yeast and can be made in about 1 hour. Sourdough Discard Dinner Rolls
Ingredients (makes 4-6 rolls):
1 cup (120g) all-purpose flour
1 cup (100g) sourdough discard (unfed, from the fridge)
1 tbsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tbsp sugar (optional, for a touch of sweetness)
4 tbsp (56g) cold unsalted butter, cubed
1/3 cup (80ml) cold milk or buttermilk
Optional: 1 tsp dried herbs (e.g., rosemary or thyme) for flavor
2T milk (to brush over the top before cooking)

Baking sheet or 9-inch round pan

Instructions:
Preheat Oven: Set to 400°F (200°C). Line a baking sheet or grease a 9-inch round pan.
Mix Dry Ingredients: In a bowl, whisk flour, baking powder, baking soda, salt, sugar, and herbs (if using).
Cut in Butter: Add cold butter cubes. Use a pastry cutter or fork to cut butter into the flour until it looks like coarse crumbs with small butter pieces.
Add Wet Ingredients: Stir in sourdough discard and cold milk until a soft, slightly sticky dough forms. Don’t overmix.
Shape Rolls: Turn dough onto a lightly floured surface. Gently knead 4-6 times to bring it together. Divide into 4-6 equal pieces. Shape each into a smooth ball by tucking edges under. Place rolls 1 inch apart on the baking sheet or close together in the pan for softer sides. Take 2 T of milk and lightly brush over the rolls for added moisture. If there is still some milk left pour the excess over the rolls (it's okay if some settles at the bottom of the pan).
Bake: Bake for 15–18 minutes until golden. Optional: Brush with melted butter after baking for a glossy finish.
Serve: Cool for 5–10 minutes. Serve warm with beef stew for dipping.
